Using eggroll wrappers to make Indian food? Obviously, not traditional. But crunchy samosas make an easy appetizer for an Indian meal such as the Cauliflower Lentil Dal found here, for other dinners, or for finger food at a party. They’re self-contained, and the wrappers from the grocery store make the whole process so much easier.

For this recipe I use baked potatoes left over from a previous meal. You could also use leftover mashed or boiled potatoes, or make the potatoes from scratch. Although you might not often see sweet potatoes on menus in India, they do grow there. White potatoes are more traditional for samosas, but here I’ve used one leftover baked potato and one leftover sweet potato, smashed and mixed together. These are a healthier version of those found in Indian restaurants, since they’re baked, not fried. Other options for dipping include a tamarind sauce or a yogurt mixed with mint. (Again, the sweet chili sauce is not traditional, but I like it.) Enjoy!

Ingredients
  

  • 1 package eggroll wrappers
  • 1 cup cooked potatoes, sweet and/or white mashed or baked
  • 1 tbspn coconut or olive oil
  • 3 tbspn onion chopped
  • ½ cup peas frozen
  • 2 tsp cumin-coriander mix
  • Pinch of cayenne
  • Chutney or sweet chili sauce and coconut yogurt, for dipping

Instructions
 

  • Preheat the oven to 400 F.
  • Cover a baking sheet with parchment paper.
  • Defrost the peas in the microwave for two minutes.
  • When the peas cool, mix them with the potatoes, onion, cumin, coriander, and cayenne.
  • Have a small bowl of water next to your work surface. Place about 2 tablespoons of filling in the center of each wrapper in a little mountain.
  • Wet your finger, and then run it along the sides of the wrapper. Pick up one corner and then the one next to it. Pinch them together, and proceed around the square. At the last one, fold the point over to create a pyramid and seal. Don’t worry if they’re misshapen – they’ll still taste good.
  • Place samosas on the prepared baking sheet.
  • Bake 12 to 15 minutes until golden brown.
  • Serve with sweet chili sauce or chutney mixed with plain yogurt or other condiments for dipping.
